Jose Ruiz
The chef
Jose Ruiz was 25 years old when he left his home in Zacatecas, Mexico and immigrated to the United States in search for a better future. He started as a dishwasher and worked his way up to cook supervisor and later to an executive chef. Jose became a member of the American Culinary Federation in 1988 and in 1999 he started his family-owned catering business, Ruiz Catering. The Energy Education Center, Tulare was one of his first clients. A year later, Jose opened a restaurant in Visalia.
